“Sant’Antonio” farm, owned by Mr. Alfio La Rosa is a small family-run farm situated in Contrada Franchetto, in the municipality of Castel di Judica, just a few km from the motorway exit Gerbini on the A19 Catania-Palermo. The farm produces organic cheese and dairy products certified by the Authorized Inspection Body –Mipaaf: IT BIO 005 (Controlled Operator no. 4682).
The farm produces cow, sheep, and goat’s milk. From the processing of sheep’s milk they make different types of cheeses, like fresh cottage cheese, ricotta cheese, ricotta salata, Tuma, Pecorino primo sale with or without pepper, pecorino primo sale with chili peppers, arugula, olives, walnuts, pistachios, smoked with straw and hay, spices. From the processing of cow’s milk the farm produces mozzarella, provola and scamorza (also smoked).
